Desiccated or dehydrated coconut pulp is cut into different sizes and shapes such as: fine cut (very small), shredded (long and thin), chips (same as flakes). In Australia, desiccated coconut normally refers to fine cut.

Coconut has been the primary diet for healthy tropical islanders in the Pacific. No doubt this is a fruit that is an amazing gift from nature. Coconut is rich in fibre, Omega-6 Fatty Acids and Folate making it a spectacular nutrient in our diets.

The coconut tree - cocos nucifera, is a large palm growing up to 30m with large leaves leaving the trunk smooth. A tall coconut palm tree can yield up to 40 fruits per year. Botanically, the coconut fruit is a drupe, not a tree nut.

The Food and Agriculture Organization (FAO) of the United Nations has reported that coconut palm products are the single most sustainable crop in the world.

Coconut palm tree trunks and leaves serve as building material for farmers homes and produce fruit all year around. Coconut husk and shells can be used for fuel and are a source of charcoal. The roots are used as a dye, a mouthwash and a remedy for diarrhea and dysentery.

Coconut trees can coexist with cattle providing shade and humidity and shade conditions for other farm crops. Farmers can decide which coconut trees will be used for coconuts and which for tapping for sap to be used for coconut sugar and coconut nectar. Normally, a family will tap trees closer to their homes which are to be harvested twice a day.
